I was getting the turkey breast ready to put in the crockpot when J asked how long it was going to take. I told him it wouldn't be done for dinner, that I had something else in mind. My plan was to have baked potatoes, but when I looked through the fridge, all I found were red potatoes, so my plan had to be adapted. When I said how about some cooked kale and new red potatoes? J said it sounded like some sort of Ukrainian starvation meal. I just looked at him, laughed and said, "Yep, that's about the size of it." It was actually delicious and very satisfying.

I know... J has a great sense of humor, he's always able to make me smile, even when he's patiently surviving my constant quest for vegetarian meals that are both economical and nutritious. According to Self Nutrition data, kale is a superfood.
